Chitin Nanocrystals nanomaterials are extracted from crab shells to stabilize bicontinuous emulsions by intra-phase jamming at ultra-low concentrations. In article number 2300686, Long Bai, Orlando J. Rojas, and co-workers show the merits of bio-based nanoparticles in forming complex multiphase systems, offering a new pathway achieve advanced hierarchical multiscale materials.
